I cheated a little bit

Well, not really.
My awesome neighbor shared some of her vegetarian chili with me. After eating it straight (delicious!) I ate it again (repeat alert) but this time as a chili burger, adding Rudy’s buns, pickles and Gouda.

  1. Happy to be your awesome neighbor! Here’s the chili recipe (made in a slow cooker):

    2 cans low sodium tomato soup
    1 can diced tomatoes
    1 can kidney beans, drained
    2 cans black beans, drained
    1 can fiesta (Mexican-style) corn
    1/2 medium onion, chopped
    2 tablespoons chili powder
    1 teaspoon red pepper flakes
    1/2 tablespoon garlic powder
    1/2 tablespoon ground cumin
    1 pinch ground black pepper
    1 pinch ground allspice
    salt to taste

    Add all ingredients to your slow cooker (I also use Reynold’s Slow Cooker Liners for easy cleanup). Stir, cover and cook for 8 hours on Low or 4 hours on High. Serve with rice.
