Poke holes in thoroughly cleaned sweet potato and bake in oven or microwave until done. I nuked it, rotating 45 degrees every 4 minutes, total of 20 minutes for a rather large one.
In the meanwhile fry vegetables, spice to taste. Don’t overcook they don’t lose their crunchy texture.
Once the potato is done, cut it open lengthwise and load it up!
Super easy and the mixture of flavors makes it very delicious.
