Poke holes in sweet potato and bake in oven or microwave until done. I nuked it, rotating 45 degrees every 4 minutes, total of 20 minutes for a rather large one.
In the meanwhile fry onions, corn and black beans. Spice with salt and pepper.
Peel baked potato und mush up in a pot with minced garlic, ginger and spices. If it has cooled down too much heat it back up.
Serve everything with salsa and sour creme
