Vegetables in coconut sauce

Ingredients:

Leek
Garlic
Mushroom
Carrot
Tofu
Broccoli
Bell pepper
Corn
Soy sprouts
(Optional any veg you like, peanuts, pineapple etc)
Coconut oil

Coconut milk
Sambal manis
Salt pepper
Rice

Fry vegetables and tofu in coconut oil. When they are still crispy but cooked enough for your taste, add coconut milk and spices. Serve over rice
