Red Summer Salad
Had some things I needed to use up and this happened:
Lettuce, strawberry, bell pepper, assorted nuts and seeds, dried cranberry and strawberry-thyme dressing

This is one of my go-to dishes.
Quick, easy and always turns out great.
Adding Gorgonzola or St. Agur gives it some more edge
Orange tofu
Friends of mine inspired me to try this dish. After playing around with the spices enough it was tasty but a bit dry since my orange juice was limited.

First stinging nettle soup of the season after I found good ones on a walk. So excited!
Carrot cake
Made this after having a bunch of carrot pulp from juicing.
Omitted the apple sauce and added ginger. Was so yummy I’m not gonna worry about frosting.
Soup day
Made sweet potato soup .
Next time I will have to use less nutmeg and more ginger. Still delicious
Baked Apple (pie)
I made these a while ago.
Core apples and cube what you scooped out. Mix cubed apples with things you like. I used cinnamon, nutmeg, raisins and syrup.
Top with puff pastry strips or pie crust.
Bake in oven. Depending on how thick the apple still is you might have to bake them and add the crust half way through.
